Take this very popular and informative class to learn and practice the techniques that help take the chore out of cooking. Techniques include: boning a chicken • dicing onions, carrots and other vegetables • pasting garlic cutting up fruit. Knife selection, sharpening and care also will be covered. Bring your own knives or use ours. A light meal will be served. Instructor: Chef Joel Olson.

Fundamental Techniques of Cooking
Designed for those who wish to improve or enhance their cooking skills, this program will focus on the basic techniques necessary to cook any cuisine: knife skills • making stocks and sauces • sautéing • roasting • marinating • baking and more. Class One: Chicken Stock • French Onion Soup Chicken, Mushroom and Cheese Strudel with Roasted Red Pepper Sauce • Herbed Rice Pilaf • Blanched Beans with Balsamic Glaze • Tart Tatin with Cinnamon Cream. Class Two: Beef Stock • Eggplant, Portobello Mushroom and Basil Napoleons with Goat Cheese • Pan-Roasted Beef with Mushroom Reduction • Heavenly Mashed Potatoes • Roast Parmesan Tomatoes • Crème Brulee with Scandinavian Sugar Cookies.
